Vegan Chicken Broth

An easy vegan chicken broth made from a simple blend of a few spices that makes a great vegan substitute for chicken broth for any recipe. Perfect for adding flavor to soups, sauces, and gravies!

This recipe is the best vegan substitute for chicken broth. Around Thanksgiving this year I threw this together and used it to make the stuffing for my Vegan Turkey Roast recipe. It came out really good, and it was so quick and easy to make. I usually use Better Than Bouillon’s Vegetarian Chicken flavor, but I ran out so I had to make something in its stead — which it turns out I actually like a lot better. And, it’s always so much cheaper to make yourself than to buy something premade, especially if you already have most of the ingredients.

You can make a big batch of this dry seasoning mix and keep it in a mason jar pre-mixed without the water to use as a vegan chicken bouillon, just adding around two teaspoons of the seasoning mix for every four cups of water as needed. This vegan chicken broth recipe also makes a great vegan chicken noodle soup — just saute some diced onion and carrot, add this broth along with some cubed vegan chicken or tofu, and a handful of broken linguine noodles!

When you think about the flavors of chicken broth, it really boils down to a combination of savory, salty, pungent, and slightly sweet flavors. It’s not a very difficult flavor combination to try to recreate using a few key spices.

Can’t Vegans Use Regular Chicken Broth?

This is a common misconception. While chicken broth doesn’t physically contain meat, it is typically made by boiling chicken bones with vegetables and herbs which means that it isn’t vegetarian. This also goes for chicken bouillon and chicken-flavored powders like those in ramen noodle packets which don’t use artificial chicken flavor. There are, however, vegan and vegetarian chicken-flavored broth products that can be found in standard grocery stores, and are labeled as such, but you can also make a delicious substitute like this vegan chicken broth recipe right from the comfort of your home.

What Is Mushroom Seasoning?

Mushroom seasoning is a seasoning made from powdered mushrooms and salt which adds depth and complexity to any recipe you add it to. It has very a bold umami flavor that can be used to enhance whatever you’re making. It can be used in everything from soups and sauces to salad dressing and stir-fries.

In my opinion, it’s one of the best seasonings out there particularly when you want to add a really nice savory flavor. It also makes a great replacement for monosodium glutamate (MSG) — that stuff they add to junk food that makes it so addictive. If you’ve never tried mushroom seasoning, I highly recommend it. It’s a staple in my kitchen and I add a pinch to almost everything.

What Can You Use In Place Of Mushroom Seasoning?

While mushroom seasoning adds a very unique umami or savory flavor to a recipe, there are a few things you can use in place of mushroom seasoning. You can use monosodium glutamate (MSG) or white miso paste; or even a mixture of the two. For using MSG in place of mushroom seasoning, I would suggest using a quarter of the suggested amount of MSG that the recipe calls for of mushroom seasoning.

Is There A Difference Between Granulated Or Powdered Garlic?

Powdered and granulated garlic are both great spice additions to any kitchen, but they do have different personalities. Powdered garlic is the more subtle of the two, with a milder flavor that won’t overpower the other ingredients. It’s perfect for adding a savory hint of garlicky goodness to sauces, soups, and dressings. Whereas granulated garlic is bolder in flavor and has a grittier texture that makes it better for use in place of minced garlic. Both provide delicious flavor, but garlic powder works best for this recipe. It’s the same for onion powder. The more fine the powder is, the better.

What Is Turmeric Used For?

Turmeric has a unique flavor, but it’s also a great way to add a beautiful yellow color to any dish without using very much of it. It not only adds a nice color, but it also has some amazing health benefits too.

It’s known for its anti-inflammatory properties and is packed with antioxidants that can help protect your body from disease, particularly when combined with pepper. For this recipe, it’s mainly just used for coloring but any health benefits are an added bonus.

Use This Vegan Chicken Broth For:

  • Making soups: Broth is a great base for soups, as it adds flavor and richness to the dish.

How To Make Vegan Chicken Broth

This vegan chicken broth recipe is incredibly simple. It’s made from just six spices and water. To make it you just need garlic powder, onion powder, white pepper, salt, turmeric, and mushroom seasoning powder.

Vegan Chicken Broth Recipe

Ingredients

  • 32 oz or 4 cups water
  • 1 tsp mushroom seasoning powder
  • 3/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/8 tsp white pepper
  • 1/8 tsp turmeric (for color)
  • 1/4 tsp salt or to taste

Add all ingredients to a bowl and whisk together.

Use in place of chicken broth in any recipe for a vegan alternative.
