I eat pizza a lot, but whenever I go on a health kick and decide to cut back on carbs, I like to make these easy thin-crust pizzas to satisfy those cravings. You might not immediately think a tortilla could make a great pizza crust, but with the right recipe, it can actually make the best thin and crispy pizza without all the work of stretching out pizza dough. What Is Thin Crust Pizza?
A thin-crust pizza is a pizza that has a cracker-thin pizza crust. It can be made with any non-leavened dough or flatbread and topped with sauce and cheese as well as your favorite toppings, then baked until crispy.
This thin-crust pizza recipe uses a tortilla and you cook the tortilla pizza first in a pan with oil to crisp the bottom, then it’s placed under the broiler on high to cook the top, caramelize the cheese, and roast any toppings. I think it comes out better this way than just baking it.
How To Make A Keto-Friendly Pizza Crust
To make this thin-crust pizza recipe compatible with your low-carb or keto diet, you just need to use a low-carb tortilla and pizza sauce. There are tortillas out there with only four grams of net carbs per serving, like these carb-balance tortillas. You could also use Joseph’s lavash bread which is around six net carbs per serving. Both come out really well. As for a low-carb pizza sauce you can use plain crushed tomatoes since they have no added sugars, or make a high-fat alfredo sauce by melting a tablespoon of parmesan cheese into a few tablespoons of heavy cream and use that to make a white pizza.
Tips For Best Results
- Shred your own cheese from a block, it melts and tastes better than pre-shredded.
- Try to use a pizza sauce on the thicker side like something made from tomato paste so the sauce isn’t too runny, or use less sauce
- Don’t go too heavy with toppings, this can push the sauce and cheese over the edge as it cooks since there is no cornicione, or raised pizza crust, to prevent them from spilling over.

- At least a 12″ pan with a lid for crisping the pizza’s crust, and a broiler-safe pizza pan or similar baking pan for broiling the cheese.
How To Make A Thin Crust Pizza

Gather your ingredients to make the pizza such as the oil, a tortilla, a quarter cup of pizza sauce, a handful of shredded pizza cheese, plus any toppings you’d like.

Spread the sauce over the tortilla, leaving about a quarter inch of the outer rim empty for the crust, then sprinkle the cheese and add your toppings.
Note: Leaving the outer rim of the tortilla free of sauce and cheese helps prevent the sauce and cheese from spilling over the edge and making a mess in the pan or oven.

Preheat your broiler by setting it to high heat.
Then heat oil in a pan over medium heat on the stove, and add the prepared tortilla pizza. Cover the pan with a lid, then cook until the underside is golden brown and crispy, about two to four minutes.
Note: Using medium heat takes a little longer, but helps to make the crust crispier and more evenly golden brown. Covering the pan with a lid helps to retain the heat in the pan which helps to melt the cheese before broiling. If you don’t have a lid, that’s fine, you might just have to broil a little longer.

Once crispy, transfer the pizza to a pizza pan or other broiler-safe pan and place it under the broiler. Broil the pizza for one and a half to three minutes or just until the cheese is caramelized and nicely speckled with golden brown spots.

Allow a few minutes to cool, then top with your favorite herbs and spices, cut into slices, and enjoy!

Easy Thin Crust Pizza
Ingredients
- 1 tbsp vegetable oil
- 1 large tortilla, about 10″ in diameter
- 1/4 cup pizza sauce
- 1/3 to 1/2 cup shredded mozzarella or a pizza cheese blend
- toppings, optional
Instructions
Spread the sauce on the tortilla, then top it with cheese and any toppings you’d like. Try to leave a little room for crust along the edge so the sauce and cheese don’t spill over.
Preheat the broiler to high heat.
Heat the oil in a pan over medium-high heat, then add the prepared tortilla pizza. Once the bottom is crispy and golden brown, turn off the burner and transfer the pizza to a pizza pan or other broiler-safe pan then place it under the broiler. Broil for 1 1/2 to 3 minutes, until the cheese is nicely golden brown.
Once the pizza is cooked to your preference, use oven mitts to remove it from under the broiler then cut it into slices and enjoy!
